Barbeque Salisbury Steak II

This classic meal features mouthwatering tender beef patties topped with a delicious barbecue sauce.

Servings: 100 servings




Beef, ground, extra lean, raw 12 pounds 8 ounces
Bread stuffing, bread dry mix 2 pounds 5-1/2 ounces
Onions, dehydrated flakes 12-1/2 ounces
Eggs, large 19 large
Water 2 quart 1/4 cup
Oil, salad 1/3 cup 1 tablespoon
Barbeque sauce 1 quart 5/8 cup
Worcestershire sauce 2 tablespoons 1/4 teaspoon
Pepper, black 1/2 tablespoon
Water 1 quart 5/8 cup


  1. Mix meat, dry stuffing mix, onion, eggs, water, and oil until well blended. Using a #12 food disher portion onto lined sheet pan. Flatten meat.

  2. Bake at 350° F until product reaches 160° F and/or is browned.

  3. Drain excess grease from pan.

  4. Combine barbeque sauce, water, worcestershire sauce and pepper. 

  5. Heat sauce until slightly thickened.

  6. Pour 1/8 cup sauce on top of each meat patty.

  7. Hold at minimum of 150° F until served.
