Cilantro Lime Dressing

This is a tangy dressing with a hint of honey. It is delicious, versatile and easy to make!

Ingredients

Cilantro, fresh 9 1/2 ounces
Garlic, fresh 1 1/2 teaspoon
Lime juice 1 1/4 cups
Honey 7 fluid ounces
Pepper, cayenne, ground 1/3 teaspoon
Oil, vegetable 3 1/8 cup
Cumin 1/3 teaspoon
Vinegar, rice 1/4 cup 1 Tablespoon

Instructions

  1. Trim and wash cilantro.

  2. Mince the garlic.

  3. Place cilantro and garlic into a food processor and pulse a few times until the cilantro is chopped (you may have to do several batches).

  4.  Put in a large mixer bowl.

  5. Add the lime juice, honey and cayenne pepper and blend. While blending, slowly add the vegetable oil. Continue blending until smooth.

  6. CCP: Hold for cold service at 41° F or lower.
