|Cilantro, fresh||9 1/2 ounces|
|Garlic, fresh||1 1/2 teaspoon|
|Lime juice||1 1/4 cups|
|Honey||7 fluid ounces|
|Pepper, cayenne, ground||1/3 teaspoon|
|Oil, vegetable||3 1/8 cup|
|Vinegar, rice||1/4 cup 1 Tablespoon|
Trim and wash cilantro.
Mince the garlic.
Place cilantro and garlic into a food processor and pulse a few times until the cilantro is chopped (you may have to do several batches).
Put in a large mixer bowl.
Add the lime juice, honey and cayenne pepper and blend. While blending, slowly add the vegetable oil. Continue blending until smooth.
CCP: Hold for cold service at 41° F or lower.
