|Potatoes, sweet, fresh, OR purchase precut sweet potatoes||16 pounds|
|Oil, vegetable||1 cup|
|Sugar, brown||1/2 cup|
- Wash and peel sweet potatoes. Cut into sticks or wedges. In a large bowl toss sweet potatoes with oil.
- Crush Cheerios. Mix with brown sugar. Toss the sweet potatoes with the Cheerio mixture.
- lace on sheet pans. For 50 servings use 2 full sheet pans (18”x26”x1”). Do not crowd the sweet potatoes or they will steam in the oven.
Bake at 400° F for 20 minutes, or until tender.
- Serve immediately.
